Homemade Gluten Free Mayonnaise! Healthy and delicious~

This Mayo recipe is quick and easy! It takes just about 5 minutes to prepare! Feel good about eating Mayo when you know exactly what goes into it~  

Ingredients:

A little less than 1 cup Avocado oil
2 tsp apple cider vinegar
1 tsp white vinegar
1 whole egg + 1 egg yolk (room temperature)
A healthy squirt of lemon
A pinch of sugar or alternative (optional)
1/8 tsp salt

Directions:

(It is best to use an immersion blender for this recipe if possible)

1. Put all ingredients except avocado oil into blend cup. 
2. Pour oil in
3. Let all ingredients settle to the bottom (oil will separate on top layer)

4. Place immersion blender to the very bottom of the jar
5. Hold in place and blend until most of the ingredients blend together

6. Move immersion blender until all ingredients blend together
(if using a regular blender, blend all ingredients once oil separates from the rest of the ingredients)

Store in a glass jar and use within 2 weeks~

Enjoy on your favorite sandwiches, wraps, salads, or veggies! This is also a great creamy base to make sauces and dips out of!
